Eh bien voilà, c'est (presque) parfait.

Sans retirer la déclaration MIME qui est obligatoire, tâche de
configurer ton logiciel pour qu'il utilise ISO-8859-1 (Latin1)
ou ISO-8859-15 (Latin9) par défaut. Il devrait savoir basculer
automatiquement sur UTF-8 s'il en a besoin.
